Two knives cover the majority of kitchen work — and these two are chosen well. The 90 mm paring knife handles close, careful tasks away from the board; the 18 cm santoku takes on vegetables, fish and meat with a blade thin enough to slice cleanly without crushing. Both carry the Tsuchime hammered finish: the small indentations reduce drag and stop food from sticking as you cut.
Each blade is forged from 440C high-carbon stainless steel, hardened to HRC 60 ±1, and ground to a 15° double-bevel edge on each side. Black pakkawood handles with hidden full tangs sit firmly in the hand, and a bamboo saya is included with each knife to protect the edges between sessions.
